Our Fun Weekend Trip

... and by "weekend" I mean 36 hours:)

Erik has been working a VERY busy schedule, and it seems that it won't really change in the next 4 years. He works 6 days a week, 2 nights usually are spent overnight at the hospital, and it totals about 70ish hours a week!

One day he came home and told me he was going to have 2 consecutive days off.. and they were Saturday and Sunday! We jumped on the opportunity to go away for the weekend. We decided to check out the state park of Desoto in northeast Alabama and stay at a bed and breakfast. I also discovered that there were going be two festivals going on in that area: the Fall Colorfest Festival in Mentone, AL and the Bluegrass Festival in a nearby community college.

Our WONDERFUL neighbors Craig and Dave watched Honey and Kirbs. Then Craig handed Erik the keys to his convertable BMW and told us to have fun!  We had a wonderful trip... err.. I mean.. 36 hours:)

Recipes from my bestie Monica!


Cheesecake Sopapilla
Ingredients:
The Sopapillas
2 cans of crescent rolls ( I get the low fat ones)
2 pkgs of cream cheese
1 cup of sugar
1 tsp of vanilla
 
Topping
1 stick of butter (melted)
1/2 c of sugar
1 tsp of cinammon
 
-Preheat oven to 350
-Spray 9 X 15 pan with pam
-place one can of crescent rolls on bottom (lay out with sides touching)
-mix together all ingredients (1 c of sugar, the cream cheese, 1 tsp of vanilla) for filling and spred on top of cresents  (and I did it with an electric mixer so it would spread easier.
-take other can of crescent rolls and lay on top (touch all sides again)
-pour melted butter on top of crescents
-mix sugar and cinnamon and sprinkle all over butter
-bake for 30 mins
-wait an hour before cutting
(the girl who gave the recipe said she likes it better cold and put it in the fridge. I left mine out till we ate and then fridge it after, either way taste good).
 
Crockpot Mexi Soup by Lisa
Ingredients:
2 cans of Amys vegetarian chili
1 can of tomatoes and chilies
1 can of sweet corn
1 can of black beans
Sour cream
Sprinkle cheese
 
-Dump in crock pot and mix
- cook for 4 hours
-serve with sour cream and sprinkle cheese on top
- SOSOSOSO good. We love it.
(if you like more of an ingredient, you can put more of it in there. Like I'm making mine for my dad's tonight so I put 3 cans of chili in there and I wish I would've bought one more can of sweet corn)
 
Dump Cake (which I'm making for the first time today)
Ingredients:
-I box of yellow cake mix
1 stick of butter
-2 cans of cherry pie fillers
-1 can of crushed pineapple (drained)
 
-Oven at 350
Mix cherry pie filling and crushed pineapple togheter in 9 X13 baking dish
-pour dry cake mix on top of cherry/pineapplie mix
-cover cake with stick of butter (chop up butter and spread)
-spread out evenly
-bake for 45 mins.
bubbly and brown on top.

 

Easy Yummy Apple Walnut Ravioli


I got this EASY recipe from Real Simple magazine. Erik loved this dish! I will be definitely making this again. Its healthy and takes only 20 minutes to whip up!

Ingredients
1 lb cheese ravioli (I used whole wheat ravioli)
2 tbs olive oil
1/2 cup walnuts; roughly chopped
1 crisp apple; cut into matchsticks
1/4 cup parmesan

Step 1: Cook ravioli according to package
Step 2: heat oil in skillet, add walnuts and cook often until lightly toasted, takes about 4 minutes
Step 3: Add apple, salt and pepper, walnut, ravioli, and parmesan

Straight from Stacy Reeves' Blog

When I first started planning my wedding I was unsure about most of the wedding details. The only thing I knew was that I wanted an amazing photographer! I am am picture girl... I always have a camera on me... I know a picture lasts a lifetime (unless your computer crashes).... So I began a strenuous search for the perfect photog. I came across Stacy Reeves on Facebook. She is a girl a couple years older than myself, practically self taught, and very talented. I was impressed! Since booking Stacy, Erik and I took engagement, wedding, and day after photos with Stacy. Meet Honey!








Erik and I brought his little brother Kent's dog back from Texas to watch til December. We would never have considered bringing in a new dog, but she and Kirby are best friends. Any time we cannot find them at my in-laws house, most likely they are snuggled among shoes in  Ms. Pam's closet.
